‘Easy Peasy’ Recipes Kids Love- for Mums Who Think They Can’t Cook!!

This is the first in a series of articles from our local expert Mums. Today we are looking at easy recipes that create marvellous results, and make us look like domestic goddesses without too much effort...

Really Easy Peasy… Choc Chip Butter Biscuits
This is a great one I use with kids as they can do all the mixing and add their own favourite fillings!

Ingredients
100g (4oz) Butter
50g (2oz) Sugar
120g (5oz) Self Raising flour

For the filling

2 generous handfuls of milk chocolate chunks

Method

Set the oven to 180c/350f/Gas Mark 4.
Grease 2 non-stick baking sheets
Mix the butter and sugar until the butter is soft and the sugar begins to be less grainy in the mixture
Stir in the sweets (if you are using some)
Other options are:
  • Replace 1 oz of the flour from the recipe above with 1 oz of oats and add 2 tablespoons of syrup or honey too to the dough.

  • Add 2 small handfuls of raisins, cranberries, rolos or smarties, etc.
Stir in the flour, it should now be possible to get your hands in there and bring the mixture to a soft but not sticky dough. If the dough seems too sticky add tiny dustings of flour until it’s easier to work and not as clingy to your fingers.
Now you can either make simple rounds by taking small golf ball size pieces out of the dough rolling them between the palms of your hands to make them round and then placing them on the baking tray and pressing them down to flat rounds with a fork.
Or you can get the kids involved with some cookie cutters. If you are using cutters just roll the dough to the thickness of a digestive and let them cut out their own shapes. Place on the tray leaving space for spreading slightly.
Pop in the oven for 15 mins – check them. If they are light brown get them out or leave in for another 5-10 mins until golden brown.
As the recipe uses self-raising flour you will find they rise a little in the oven. When you get them out of the oven use a fork to flatten them back down to digestive height as this adds to the crispness of the biscuits.
Leave to cool on the tray for 2 mins then transfer to cooking rack.

Easier than you might think…Profiteroles
Yes you can make these!! I promise you that this method is nice and simple ;)


Ingredients
50g (2oz) Butter
60g (2 ½ oz) Plain Flour
2 Eggs, well beaten
150 ml ( ¼ pint) water


For the Sauce
125g (4oz) plain chocolate
2 Tablespoons water

For the filling
A small carton of whipping cream

Method
Set the oven to gas mark 6/200 C/ 400 F
Grease a baking sheet and then dampen it by holding under the cold tap for a few seconds
Cut the butter up into cubes or blocks and heat it in a pan with the water.
Sift the flour into a separate bowl.
Once the butter/water mixture comes to the boil take it off the heat and tip all the flour into the pan in one go.
Keep beating the mixture with a wooden spoon and stirring it until it is smooth and comes away from the side of the pan, forming a dough.
Leave it to cool for 5 minutes.
After the 5 mins beat the egg into the dough mixture to make a thick smooth glossy paste.
Put heaped teaspoons full of the mixture onto the baking sheet, making them about the size and shape of a golf ball leaving space in-between each for rising (about 2 cm between each is enough)
Put them in the oven for 20-30 until puffed up and golden brown.
Once cooked take them out of the oven and transfer to a cooking rack. Prick a hole in the side of each one to let out any steam.
Next put the plain chocolate and the 2 tablespoons of water in a bowl (Pyrex is good for this) heat gently over a pan of boiling water until the chocolate melts. Stir until smooth and set aside.
Whip the cream up in a bowl until it thickens and the whisk starts to leave a trail in the cream behind it (using an electric whisk is easiest) Make a hole in the side of each profiterole and, using a teaspoon or piping bag if you prefer, fill the cavity with cream.
Once they are all filled with cream, pile them on a plate and pour the melted chocolate over the top.
Hey presto you look like master chef and you are in for a real treat!!!!
